4?"lbs (2 kg) Peeled prawns (thawed if using frozen),
3 Medium onions,
5 oz (140 g) Chopped tomatoes,
9 Medium sliced courgettes,
6 oz (170 g) Patak′s Extra Hot Paste,
3 fl oz (85 ml) Vegetable oil,
3 oz (85 g) Desiccated coconut,
3 oz (85 g) Chopped coriander or parsley to garnish

Bereidingswijze: Method
Heat the oil and saute the onions. Add the tomatoes and Patak′s Extra Hot Paste and simmer for 3-4 minutes (adding a little water if necessary). Fold in the courgettes and cook for a further 3-4 minutes. Add the prawns, cover and simmer for 5 minutes. Remove from heat and fold in the coconut.
